Friday Fitness #2 Healthy Banana Muffins in 5 simple steps!

Healthy Banana Muffins!


This is my healthy recipe for banana muffins. They're easy to make and taste great.
Great alternative to cake when your in need of a sweet treat.They also make great breakfast muffins.
I usually make double the recipe and freeze them so i can have one for breakfast each day!
You can also easily alter the recipe to what you have in your kitchen already!


Ingredients:(Makes 6 large muffins)
2 tbsp milk
2 tbsp butter
2 tbsp honey or sugar
2 bananas
1 cup wholemeal self-raising flour
1 tsp baking powder 
Optional-(cinnamon,nutmeg,allspice)
Optional-(chopped nuts, raisins, flax-seed,dried fruit etc)

1.Melt the milk,butter and honey/sugar in a saucepan over a low heat or if your lazy like me,zap it in the microwave for 40 seconds(or until all melted)

2.Add the bananas to the mixture and mash

3.Once everything is combined,sift the flour and baking powder into the mixture and mix altogether.
At this point you could add in extras like dried fruit or cinnamon(which is my personal fav-tastes great and speeds up your metabolism!) 

TIP-If you don't have self-raising four on hand just add 1 1/2 teaspoons of baking powder for every 1 cup of flour and 1/2 a teaspoon of salt.

4.Scoop the mixture into muffins cases/a muffin tin(or cupcakes cases)
Each case takes about 2 tablespoons of mixture.

5.Cook on Gas mark 5 (or 190 C) for 20-25 minutes. The muffins are ready when they are golden on top.

TIP-To test if they are ready stick a metal skewer or knife into the middle of one of them.If it comes out clean they are cooked!


I also worked out the calories for this recipe.Each muffin is 140 cals. Which isn't bad if your wanting to have one of these for breakfast!
